OVERVIEW:
"Menu Development and Beverage Finance" - Chris Boyenga, Consultant
In this presentation Chris will be reviewing the role of the beverage director in clubs and highlights what knowledge and practices are key for developing a competitive and successful bar program.
The second part of the presentation will cover how a beverage program manager creates and analyzes key beverage performance metrics to make informed decisions about moving the beverage program forward and presenting that information to the accounting departments and supervisors in a meaningful way.
The last part of the presentation focuses on the development of a bar menu offering that caters to your club's demographics, delivers high value to the membership and aligns with your clubs F&B budget.

ABOUT THE SPEAKER:
Chris Boyenga is the owner of Boyenga Consulting LLC, a firm that provides F&B consulting services to Private Clubs focused on delivering powerful changes to beverage programs. Chris is a former US Marine who served as presidential security to President Obama and his family during the presidents second term and left the Marine Corps in 2015. Chris attended both UDC and George Washington University studying Pre-Law at UDC then Business Economics and Public policy at GWU. During his college years, Chris was a bartender studying under 2 nationally recognized bartenders and sommeliers and decided that after serving his country he wanted to serve others in hospitality.
He has worked as the Beverage Manager at Philadelphia Cricket Club, Sommelier and Beverage Director at Aronimink Golf Club and as Clubhouse Manager at Manufacturers Golf and Country Club before deciding to open his own business. Chris prioritizes on-site immediate changes during his consulting trips at clubs so that they may start the work of immediately becoming competitive pinnacles of the beverage community.
